Does demo progress carry over?

No. The official PlayStation demo listing says demo progress cannot be carried into the base game.

What does the save data unlock?

The same listing says players with demo save data can receive the Charm: Kubi Akari in the base game. That is a save-presence reward, not a transfer of mission progress, items, or character state.

Keep the demo save on the same local profile and platform family until you have confirmed the reward. We have not tested cross-region, cross-account, cloud-save, or cross-platform edge cases, so this page does not promise them.
